This will be a short one because I’m spending time with the fam!
- 1 lb. ground beef
- 1 can green chiles
- 1 can Rotel
- 1 can stewed tomatoes
- 1 can pinto beans
- 1 can diced tomatoes
- 1 can corn
- 1 can kidney beans
- Brown ground beef
- Add ground beef and all ingredients to crockpot
- Cook on low about 8 hours
- Serve with tortilla chips
It’s the perfect winter gift when you want to spend more time with the family and still enjoy a delicious dinner!

So… not so good with my goal of posting a few times a week. I know that with most things (like my gym routine) consistency is key! So here’s to the goal of next week: post three times during the week.
But I do have a great new recipe to share with you: Chorizo Chili
The best part is, it may be simpler than the easiest dessert ever!
Start with these ingredients:
1 lb. ground beef
1 can chili with beans
1 cans diced tomatoes
1 can stewed tomatoes
1 can tomato sauce
1 package chorizo
1 can chili beans (not pictured)
Throw all in a crockpot, cook on low for 6-8 hours. (I leave mine all day while at work and its perfect.) Serve with cornbread and enjoy!
